There isn't a universal number, and anyone who gives you one is guessing. Published requirements differ substantially. HX currently requires evacuation and repatriation cover for Antarctica and recommends at least US$200,000. The Falkland Islands visitor permit page specifies aero-medical evacuation cover of at least the equivalent of US$2,000,000. South Georgia requires adequate cover for all evacuation costs and repatriation of remains without publishing a single figure. Those are illustrations of the spread, not a menu to pick from.
The right amount depends on your route, your vessel, your activities, the evacuation plan and your contract with the operator. Don't take a limit from a blog, including this page.
The sequence that works: get the written requirement from your operator, then have a licensed insurance agent confirm your policy meets or exceeds it. We can tell you which questions to ask and we can chase the operator's wording for you. We can't tell you a policy is sufficient, because that isn't ours to say.
